"Safer, Cleaner, Tastier". This tagline is the Sushi King HACCP team motto and has been embedded in our daily lives since we launched our "towards HACCP certification" efforts on 11 January 2005.

Since then, a lot of analyses, documentation, modification in procedures, training, recording of data, weekly meetings with restaurant teams and auditing have been conducted to ensure that all the procedures and practices at restaurant level were in accordance with the HACCP Netherland RvA standards.

The whole HACCP team and Sunway Pyramid Restaurant have transformed and further enhanced themselves from a customer and quality-focused restaurant (based on the basic ISO 9001:2000 practices) to a restaurant that focuses on food safety, in line with the new Sushi King tagline, "Healthy Good Taste". All this boils down to one objective that is to ensure quality and food safety for all our valued customers.

In the evening prior to the audit, we made final preparations by transferring all the related documents from our head office to Sunway Pyramid, arranging all the documents for easy retrieval and adding some final touches to the restaurant to ensure the smoothness of the audit.

The big day for the HACCP Compliance Audit was on 27 April. Four auditors from Moody International, our certification body, arrived to conduct the audit at Sunway Pyramid Restaurant. The 10 strong HACCP team members and 20 restaurant team members participated in the audit process that consisted of interviews, observations, documents and record reviews. After eight whole hours of auditing the documents and practices, we were finally briefed on the audit findings by the lead auditor, Mr. Johnson Tan. At the end of the briefing, we were overwhelmed by feelings of joy and triumph when he announced that we were now officially HACCP certified.
